Chocolate crib cake

Here's my most recent cake order done for a baby shower over the weekend. It was a, tres leches cake, filled with peaches and whipped cream. I was hesitant about using this mold with chocolate but I felt it was much easier and faster drying than gum paste, best part is that she can eat it when she's done with the cake. I also made a little baby outfit out of gum paste, bib, beanie, baby blanket and tiny booties. It was a very simple cake but I usually like to airbrush whipped cream cakes just because I can't use fondant on these cakes but they were very happy with the results and ate all of the cake.....no leftovers.

Sorry I haven't been posting any recipes or even pictures but I have been so busy with work and no time to really bake. Believe me I miss it soooo much!

Imara's wedding cake

I just made this cake for a cousin's wedding this weekend. Colors were plum and sage green. Had a really hard time getting that color in gum paste to make flowers so I decided to so silk flowers on the cake instead. Bottom layer was vanilla cake with raspberry mousse, chocolate with Bailey's coffee cream and top layer was red velvet with cream cheese. All cakes were covered in fondant. Now the stand is something I'm working on, I will be making these as custom orders for anyone who is interested in cake and cupcake stands. Pretty soon I will be posting some more pictures of the different stands to give you guys a better idea on what they will look like.

Booty cake

This is one I'd been wanting to make for awhile. I finally got to make to make it for my brother in law's 40th birthday.I was inspired by members on Cake Central to make it. I didn't think it would turn out as well as it did, I'm actually pleased with the result. You can't really see the belt but it does read "Happy 40th" in sugar pearls. I don't have templates but I did cut it all out freehand, I just think it's easier. Well, glad I was able to make and post it, if I get to make another I will post a tutorial on how to make it. Wedding cake

Here's the wedding cake I promised I would post when done, unfortunately the picture is not the best, as I did not take my Nikon with me. Three tier top tier was red velvet with cream cheese filling, middle tier was chocolate cake with Bailey's Irish Cream filling and bottom tier was lemon cake with raspberry mousse. Mmmm .......very tasty and moist cakes, all iced in butter cream and decorated with fresh flowers. I hope and am pretty sure bride has better pictures. Anyhow the cupcake tower I also promised was a disaster just thinking about it makes me want to cry. If I can get a picture I will post details, thanks for looking.

60th Birthday Cake

This is the 60th birthday cake I made for a friend's grandmother who just got in from out of the country. Cake was vanilla with strawberries and cream, covered in fondant. Also my first attempt at a gum paste rose, and I must say it wasn't as hard as I thought. I had fun doing them and I love the gum paste I bought from, CK Products, it's the best, very pliable and easy to use. Too bad I didn't get much from them, next order I will go all gum paste. Anyhow,I have more coming up this weekend, looks like a wedding cake and a butterfly/daisy cupcake tower as well. Keep posted for more pictures, thanks again!

Dinsey Princess cupcakes

Another cupcake order, but these were just simple princess cupcakes nothing fancy. I didn't get a picture of the pink ones but each princess color coordinated with the whipped cream topping. I had already forgotten all the princesses I've been in la-la land, I thought it was Ariel, Cinderella, Snow White and Jasmin, but looks like there are more. As for flavors they were chocolate and vanilla and this time no butter cream instead whipped cream (my favorite). Tomorrow I will be posting another 60th birthday cake with gum paste roses that I made for the first time. Well, tomorrow you be the judge of that.

Hello Kitty

I've always wanted to try a, Hello Kitty, cake and was finally able too. It was a surprise cake for my daughters best friend at school. It was easy to carve out but not as easy to apply icing. The frosting was butter cream and I usually always use the same recipe but this one erked me. Anyhow this was a very small cake 6", bow was made from fondant and so were the eyes, whiskers and nose. My next Hello Kitty has to be a 3D one, that would be real cute. Well keep posted this weekend I have cupcakes and a 60th birthday cake too.

Dominique's 19th Birthday

Here's my niece's last minute birthday cake. I really don't like doing last minute cakes because they never turn out right but I guess it turned out good. The most important thing is she liked it! I have to admit I did make a huge mistake.....funny she's really 19 not 18 I don't know what I was thinking but I was off a whole year. Anyhow the purse was made from rice krispies covered in fondant and all the makeup is chocolate.I have to say I really like those chocolate molds and have never really used them until just this weekend. I have so many of them too. Looks like I'll be using more chocolate accessories from now on, it's much easier than gum paste. Flowers were made from gum paste. She loves chocolate so the cake is chocolate cake with Oreo cookie filling iced in vanilla butter cream. Hope you like I have another cake I'm working on for this weekend so keep posted. Thanks!

Another belly cake

Here's another belly cake I recently made for my niece, Jessica's, baby shower. She wanted a belly cake so bad for her shower. This one was very simple bottom cake was chocolate with whipped cream and fresh strawberries and used a white scalloped board for belly base, because we all know fondant doesn't do well on whipped cream. Anyhow -not a hard cake to make but would've wanted to add more decorations to the cake and it wasn't going to work, also she was having a boy so I didn't have all the "pretty" options. The Best Book..............

Some time ago I was at, Big Lot's, looking for some containers and I stumbled upon the book area because I like to read and cook. To my surprise I found this book and skimmed through it and thought to myself....I would love to try these recipes. So 2 years have gone by and guess what I just opened it and tried one for the first time.....it's the best. So easy to follow with pictures and detailed instructions. I'm soooo loving it right now. I made the vanilla cake......it smells good and taste even better. This cake has the nicest texture, flavor and is wonderful. And the best part was that I only paid like $5 for the book when it cost like $40. Yeah I know.....why did I wait so long to open it. I'm very sure you can find it on, Amazon, for close to that price, even if it's more it's worth it. Some recipes include cakes, breads, custards, glazes, icings, phyllo pastries the list goes on and it's doesn't call for 1,000 ingredients if you know what I mean.It has so much useful information on conversions and measurements, how to do things the right way, forget taking a pastry chef course if you have the book and can follow it then your set. If your a visual learner then your outta luck. Well I guess I must say I'm going gourmet all fresh and all from scratch even if cost me more but it taste so much better! Cupcake liners

Looks like cupcakes are really in, so what did I do.....buy cupcake liners? I went cupcake crazy stopped by the store and saw all the cute liners they had and couldn't resist but to spend on more cake stuff. You know I'm going to make a little suggestion only because it happen to me recently, before you go out trying to find the right cupcake liner on ebay or other sites....try your local cake store or craft store like Michael's. I just ordered a few online and spent a little to much on a pack of liners and went on over to Michael's and found the same darn thing for 1/4 of the price. So I was pretty ticked when I found them there but relieved because now I know where to, for what I need. Anyhow I will be making cupcakes to give you guys ideas and try to do something that matches each of these liners....eventually no rush okay.

Damask Daisy Cupcake Tower

So I finally did it.......150 + cupcakes on this stand. This was a cupcake tower I did for a family member's First Communion. She wanted a damask print to match invitations but she also wanted daisies involved, so this is what I came up with. Made the styrofoam stand (4 tiers), top cake is a huge cupcake followed by 150 + cupcakes varying from vanilla, chocolate, carrot and lemon topped with butter cream and a gum paste daisy on each cupcake. Used silk flowers for decoration on the stand. It was a success I was very happy with the turnout and most importantly she was too. So next month looks like I'll be pretty busy with cakes I have 2 wedding cakes some graduation stuff and also birthdays. If I can get around to posting pictures as soon as I'm done then you"ll get to see what I've been up to. Thanks again and keep posted.

Woody, Jessie and Buzz.....I really liked this cake it's so kiddie! Well you know what I mean. Fondant covered cake (Fondx) I love that stuff so easy to work with, and toys I actually got from the store. Yeah, I'm really not that talented to get away with those figures.

So sorry that I haven't kept up on my blog but I have been so busy working full time that I don't really have time to make cakes......I miss that (booo hoo). Hopefully that cake business will come true, it's still my passion even though I don't do it as often as I wish I could. I'll post new pictures as soon as I start baking. Christening bling cake

Wow, it's been awhile and I'm really starting to miss making cakes. I've been blessed with a full time job (not doing cakes) that takes up 8 hours of my day and haven't come around to even starting my dummy cakes and portfolio. Anyhow, I did get a call from a client of mine who really wanted something simple. She found this picture on Cake Central and I tried to make it just alike with a few different things. The bling around the cross is not edible it's actually little crystals...yeah I know scary couldn't imagine anyone eating it. Other wise chocolate cake with vanilla custard covered in fondant. Cross is also fondant. She had to send me this picture via email.....dingy me forgot to take one. I completely forgot to use my new camera. Well things like that happen when your in a rush. Hope you like it thanks to cake central member (berni2611) for her beautiful cake.

I was looking into taking a, Pastry Chef course. I went to the institute today and to my surprise it was a lot of money...more money than I had planned. I was real excited about doing this whole thing. The facility is new and so nice, the staff and chef's were so down to earth and the instructors looked like they enjoyed being there. It's a place you'd really enjoy to be in if you want to learn.
So, I have a plan..... I need supporters. What I mean by supporters is if you need a cake I can make it and that money can go towards my tuition of $27,000. Yeah, I know that's pretty scary but I want it more than anything. I need to start saving now...it's going to take a long time before I save that amount but I really have to start somewhere. Another thing I need to do is finish my GED course because they want that. I need to stop slacking off and get my hiney moving. So if you need anything, let me know I can do it for you. Disney Princess castle cake

Well first of all I have to say I'm very excited! Not about this cake but because my camera is on it's way, I should have it by Wednesday this week. Yay!

Alright, now about this cake. It's a tres leches, castle cake iced in whipped cream. Filled top tier with peaches and cream and bottom tier with strawberries and cream. A bit harder than butter cream, so hopefully it'll hold it's shape with the turrets. All 6 princess's didn't fit so I squeezed in 3. Saw so many pretty princess cakes and didn't know what to do so just did and copied some from here and there and this is the final result. Hope the birthday girl likes it, she'll be 5 today.

Irene's cake topper

This was a topper I made for Irene's baby shower cake. I love this little baby, the details are awesome. I've had this mold for some time and have never come around to using it. From now on I'm going to make a bunch of them with lot's of different looks. I was trying to go for the, Anne Geddes, look with a bow on the baby's back. I think the bow was a little too big or something was wrong but, he's adorable. He's made of just fondant, I usually add some, Tylose, to make it harder but he did pretty good without it. I started making cakes about a year ago now and I love it. There are a few things I have in mind and just don't know where to start. I was considering, Pastry School, but don't' really have the money for the tuition. I never realized how expensive that could be. I do want to start somewhere, that is with one of my other goals. I'm trying to invest on a good digital camera. Starting next month I want to start on my cake portfolio. I get asked quite a few times on a book or album they can look at to see my work and as usual I refer them to my blog. Well not everyone has computer access so I want to do the right thing. I want this portfolio to be my inspiration on cakes and not copycats. I like what other people do I just don't think it's right to get credit for something your broke your head thing about making. So in the meantime I'm sketching out cake designs and we'll see what happens. I have all my cake dummies lined up and all this new cool cake stuff I bought a few months ago and are still sitting in boxes. Yeah..... let's just say we have a cake addiction. In saying that keep posted with new cake pictures that are going in the portfolio and keep your fingers crossed while I find a nice camera. Thanks!

Best Hershey's "Perfectly Chocolate" Cake!

I'm not a chocolate lover, but I have to say I have never had a better piece of chocolate cake than this. I came across this recipe after opening up a Hershey's cocoa powder. For Christmas, I had to make desert for dinner at mom's and I made it. To my surprise it was the best, so I have decided to post it on my blog so you can try it. It has this nice cocoa flavor, not too chocolaty if you know what I mean, but yummmm it's good. Very moist you'll love it and it's so easy to make. Once you try it, post your comments and let me know what you think.

Hershey's Perfect Chocolate Cake

2 cup sugar

1 3/4 cup all purpose flour

3/4 cup Hershey's Cocoa

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

Heat oven to 350 degrees. Grease and flour 2 8" round pans (your choice).

Combine all dry ingredients in a large bowl. Add eggs, milk, oil, and vanilla beat on medium speed for approximately 2 minutes. Stir in boiling water (batter will be thin). Pour into pans and bake for 30-35 min or until toothpick comes out clean. Cool and frost as you wish, enjoy.

Makes 30 cupcakes or 2 8"or 9" cakes.

Christina's cake

This was a very small cake for my sister's good friend. She's a "fondant lover" and has always wanted petite fours for her birthday. I didn't have much time to bake all those little cakes but I did make this one extra special with an extra coat of fondant. Lemon poppy seed cake with key lime filling, covered with fondant. Polka dots and bow are all fondant. She loved it and that's what counts. I really like the colors and overall look. I might just make myself one someday. I will be adding more pictures, so keep posted. Thanks once again!

Mom's 60th Birthday cake

So, I was finally able to upload my mom's 60th birthday cake. She's diabetic, so I tried to make a cute cake out of whipped cream, that wasn't too sweet. Sorry about picture quality it was uploaded through my cell phone. Cake was a butter vanilla cake with a raspberry mousse topped with whipped cream. I added a really big flower and a ribbon around the edge and some silver beads around the edge, piped a few swirls on top.....voila. It was really good and not to sweet. The most important was that she liked it. Thanks and keep posted for more pictures and recipes.

Sopa Borracha

Here's a Nicaraguan desert that's usually made around this time of year (Christmas). It's called, Sopa Borracha (drunk soup). Funny name but very good. I just made some to try it out since my mom doesn't know how to make it. I found a recipe from an authentic Nicaraguan article that's printed in that country. Some ingredients can only be found in Spanish markets (Pinole) and the rum used is, Flor de Cana, which is originally from Nicaragua. It has a distinct flavor so be sure to use that rum. Here goes the recipe I hope you enjoy it like my family does.

Pinol Cake/Marquesote de Pinol

2 oz butter

7 eggs

1/2 cup sugar

1/3 cup Pinol

1/3 cup sifted all purpose flour

1 1/2 tsp. baking powder

Rum Syrup

2 1/4 cup sugar

3 cups water

1 cinnamon stick

1 tsp lemon juice

1 cup rum (Flor de Cana)

Separate eggs/yolk. Beat whites until stiff, slowly add yolks one at a time. Slowly add sugar until well combined. Fold in pinol, sifted flour and baking powder. Grease pan (9x13) and line with parchment paper. Bake 350 x 40-45 min until toothpick comes out clean.

For syrup add sugar, cinnamon, lemon juice and water to a small saucepan and boil until it thickens into a syrup (aprox 40-45 min), once done allow to cool then add rum. Pour over cooled cake let rest for 1-2 hours (if you can preferably overnight for better flavor). Enjoy!

Brush embroidery

I know it's been awhile, but I have made a few cakes just haven't posted pictures of them. This is a fairly recent one I made just this past weekend. I was asked to make a champagne colored cake with brush embroidery flowers. It was fun to do. I know I have a few things to learn to make it look perfect but I've got the idea on the brush embroidery. Vanilla cake with chocolate mousse and fresh strawberries. Very different flavor but taste pretty good. This was a small anniversary cake for a couple who will be getting married next year. I hope they choose me to do their wedding cake. I have to upload more pictures, but in the meantime thanks for looking.

Sorry I've been away for awhile. I kinda took a cake break for several reasons. I am starting my bakathon next week sometime....... and eatathon. lol In the meantime I'm coming up with pumpkin goodies to bake to name a few here we go; pumpkin pies, pumpkin bread, pumpkin cookies, pumpkin rum cakes and of course the ever so famous pumpkin roll. Well that should start next week. I hope this year goes good with all the baking. It started off good and then slowly went down maybe it will come up again. Let's hope blessings come our way! So, I have a picture or two to post put am having a bit of trouble doing that, as soon as I can do it I will upload my recent Elmo cake. Thanks for keeping posted.

Electric guitar cake

I hope I got the idea down on this one. I know roses are supposed to be in a corner the guitar in the center or bottom and her birthday in the right hand corner. Light blue guitar and roses, this was a tres leches cake with whipped cream icing. I know in this heat and a full sheet I don't know who has space in the frig for that. I hope they did! I added a few music notes, which I don't even know if they are notes. Darn it! I didn't have a picture of the guitar she sent me but I tried. I might be missing a string or even a few knobs but the idea is there. I hope she liked it.

Another tejana

My plans were so different, it was supposed to be a sombrero charro. The night before it was due I was making the embossed edge to the hat and it cracked from one side, frustrated and upset I tried to fix it. Lo and behold I get out my edible glue and as I'm holding it together I realize the center is cracking, by then I let go of the whole thing and it was just unrepairable. Upset and crying like I always do when things go wrong, I head out at 1am to buy some ready to use gum paste. I made this instead and put it up under the heating lamp for it to dry quicker, it didn't dry completely but it made it to the party...late. I hadn't had a bad cake day for awhile until yesterday. Let's not hold my breath I still have another one this week. I really was worked up though. Anyhow my husband said they liked it when it was delivered. Sorry Karina, I hope it worked out and you liked it!

Kingston's carnival cake

This is Kingston's 1st birthday party cake. It was my idea to make it this way. I wanted to include various things that you would see at a carnival since that was the theme. Wasn't really sure how I was going to do it all but I did. My favorite part I have to say was the ticket booth and the little signs ...oh......and the popcorn. There something about little things/details that I like. The carousel horses erked me a bit, only because I tried to make them of white chocolate and I couldn't get them to pop out of mold nice enough so I made them of gum paste and hand painted them....(pain in the butt.) Ha ha Well I can't complain but I really liked the way it turned out and so did the parents.

49er stork cake

Here's one I have never done before. First time making a stork, I hope it passes for a stork? I found this picture of a stork and tried to copy it with the exception that my stork is a little fatter. Hey chubby is good! lol There's a reason why I say that.....I'm on the heavy side. Haha The idea was to have the 49 er color and a 49er theme, but I didn't want to put a 49er symbol all over, then it wouldn't look like a baby shower cake. So, I just wrote on the storks hat 49ers and on the little baby's hat. The mommy to be was having a baby boy and her theme for the nursery... I think.... was going to be niner's, or it could be just that they are huge 49er fans....not real sure. The storks body was cake and the head was gum paste and so was the baby. Vanilla cake with raspberry filling....mmm...one of my favorites. All butter cream and I used that impression mat to make it look a bit like a quilt. I hope mom to be liked it!

Goooool....... de Chivas

Another Chivas cake for a cousin. I had promised her this cake for her husband since last year. It was supposed to be a Raiders last year and I was going out for my birthday and wasn't able to do it, but this year I had too, only because we have the same birthday. Happy Birthday to both of us! Chivas jersey cake with a soccer ball and a Chivas towel over the ball. I have an excuse behind that towel, I had the worse time making that dumb ball, those shapes are a hassle to get right. I have a cutter but it doesn't work as good as it should because once you try to put them on the cake they don't connect right. Long story but I just threw the fondant towel over it with a Chivas logo.

Cowboy hat

Made this one for a real good friend of ours, Chencho, he plays the accordion for, "Novillos del Norte." I was originally going to make an accordion cake but it didn't work out like that. I settled on making a cowboy hat instead. Wasn't hard at all, I thought it would be a bit more difficult than it looked. Anyhow, I got a lot of nice complements on it at the party, that's always nice. I wasn't trying to feed the whole party with it, just made it as a personal small gift for him. It was a butter pecan rum cake with a custard filling and carved in the shape of the hat. I then iced in butter cream and covered in my favorite fondant. It's all white like the original hats these guys wear nowadays and made the black ribbon around the base of the hat out of black fondant also. I added the name of the group on a edible sheet and my husband said we should've added it to the hat, I thought it would look nicer on the board but he decided on this one. Was pretty pleased with the turnout. Thanks for looking.

Another one of those bodice cakes, except in a Raiders theme. Since, I was told that the other bikini bottom was too big, I tried to make it smaller. Skimpier is always better for men, huh? lol Anyhow not too much to say about this cake really, it's very similar to the other one only for a difference in color and team..oooooh maybe this one is a little more tan.

Diaper cake

I know this is not edible but I just made it yesterday for a baby shower that I will be going to this weekend. I love diaper cakes, I had never made one before so this is another first. What's in it; full pack of newborn pampers (42), 3 brown washcloths, 4 receiving blankets, 2 pacifiers, 1 cucumber melon baby wash from Johnson's, 1 green teether and this little plush bear. I added green and brown ribbon all around to hold it together and made brown bows, I added a big bow to the top. I really like how it came out all together. Well I figured if I don't do well with edible cakes I just might turn to diaper cakes. lol This is the other scrap booker side of me, I do have other things I enjoy not just cakes, it's just too bad I don't know how to sew. I don't know what cost more a diaper cake or real cake. I spent around $50 just for this baby items and ribbon. ....well I hope she likes it, it's a boy and these are her colors for the nursery.

Sunflower cake & pops

This sunflower cake order came from a real good friend of mine who wanted to get her boss a birthday cake. I guess she really likes sunflowers, so I got sunflower happy. Can you tell? The cake is a mocha cake brushed with coffee liquor and filled with chocolate cream then iced with chocolate ganache and decorated with fondant sunflowers. Very rich for my taste buds. The cake pops on the other hand are probably richer.... German chocolate cake dipped in chocolate ganache I then added that little sunflower and arranged them in a box with a cute bow and a handmade card. Aside from cakes I love scrap booking & cards.

I like cutesy stuff. I have to admit sometimes I overdo it. Yeah....I'm working on that. hahaha Looks like I'll be making another sunflower cake for the end of this week for someone else, just not chocolate. I actually made a very easy fondant/gum paste tutorial on sunflowers.....but not sure if I should post it. I realized that when I colored my fondant brown I used a bit much, since I did start from white. Well my hands still look a little brown even after the washing, I don't want people to think that they're dirty, if you know what I mean. I'll think about it. Thanks for keeping posted.

Clowns.....

A 1st birthday cake for a little boy who's theme was, clowns. Now, I remember back when I was little I hated clowns, they scared the living out of me. Now, when I was called for this order I just shrugged and was like, "ok." That's it. I don't really care for them anymore I guess I just haven't been around them for awhile, but back in the day my girlfriends were so into clowns. They would draw them, wear them decorate their rooms with them.....uugghh. Not me, it must have been after that movie, Clowns. Anyhow, I survived making it. Flavors were the usual (for me at least) top tier was chocolate & bottom tier vanilla with whipped cream & strawberries. I've noticed that people aren't as daring with cakes and flavors, they want the same ol' grocery store flavors. It was done in butter cream and decorated with fondant accents. Clowns were also done in fondant. When the cake was delivered to them, mom was happy, that's what counts. I really should start having people post their own comments on the cakes pretty soon your not going to believe my remarks. lol I'll keep you posted I have some interesting cakes coming up this and next month.

My first wedding cake....

Here it is! Very simple....that's how she wanted it. Top layer is chocolate cake with chocolate mousse. Middle tier vanilla cake with raspberry white chocolate, bottom tier carrot with cream cheese filling. I love the middle tier I think that's what made me sick.....I had all the left over white chocolate...and I'm not a chocolate person. The cake was covered in white chocolate ganache and then I used fondant. I piped (I need to work on that) freehand swirls and vines, I used white chocolate to do that, it's harder to work with in my opinion because it dries so fast. I'll try royal icing next time. Otherwise, I loved white chocolate ganache, I think I'll be using that from now on instead of butter cream under my fondant. As for fondant I won't anything else than, Fondx. I love it, it's so easy to work with and soft. I'm pretty happy with the results, I could've added more color but this was what bride chose, some fuchsia would have been awesome, since those were her colors. The hall was really pretty and bright with lime and fuchsia colors, I kind of felt like the cake was so simple and didn't really stand out, although people just kept coming up to see it and take picture as I was there. I hope she liked it, that;s the most important thing.

Yankee girl!

I have to say I really love this cake! First of all I love the Yankees and second I want boobs like that. lol I had a lot of good and maybe one bad remark on this one, because her bikini bottom was "too big".....of course that remark came from a guy. Oh men.....we can live without them. lol Ok, so this was for my sisters brother-in-law who was celebrating his birthday along with his 4 year old son. One cake was a fireman theme and this one of course. Well the story behind this was, when the time came to cut the cakes all the kids lined up behind this one and were all fighting over who was going to have a piece of the boob. Now what kind of kids would say something like that? Weird huh? Oh well, at least they loved it. I made this from a half sheet and carved it into this shape. Boobs are cupcakes of course (D size please). lol With a waist like that, come one? I didn't make the bottom piece smaller because I figured her boobs were already big and out there so I wanted to be a little discreet. I guess that didn't work on this cake they liked that overexposure. lol All in all everyone was happy. I hope you like it too.

Bridal bouquet cake

There something about this cake I really like. My neighbor friend ordered it for her sister as a last minute cake. Since her theme is hydrangeas for her wedding, I decided to make it into a wedding bouquet. I'm also making her wedding cake this weekend but we've changed the look so there will no longer be hydrangeas on it but we're still using lime green ribbon and going for a traditional look. I was told they really liked it and it was a simple vanilla cake with whipped cream, I used butter cream to make hydrangea bouquet, I also tried mixing the pink and green to make it look more realistic color wise. Anyhow, I hope you liked it!

Tinkerbell cakes

These 2 cakes were for a 1st birthday party. The large cake was a half sheet with an edible image in butter cream, the small cake was a smash cake for the birthday girl to just do whatever she wanted too with, this cake was also butter cream. I added a Tinkerbell on the side of the cake, just like in the bigger cake. I took the pictures in the same house with the same camera and I hate the lighting in my house, it's so dark for pictures. I want a new house! Hahahaha Kidding I love my house!

I just need a better camera. Anyhow I got an email back from them and they really were happy with it and said it taste good! That makes a baker happy. I'm lovin it........ I love my cakes too...you can really tell in my size. Hahaha I have other cake pictures so keep posted.

Christening dress cake

Here it is, the christening cake. I know it's not your typical white dress. The day before it was due I get a call from the baby's father who goes on to tell me that he wants the cake to be lavender. Well everything was all white, so I had to go back and color the little bows and make the cake itself the same color. Not your typical christening cake, but it's still cute. I really liked the turnout and so did the parents and guests at the party. I finally got my Fondx in and got to try it for the first time. I loved the flavor and it's so easy to work with. I was rolling it thin for the dress so it would tear here and there, but I got used to the texture and was able to do it right. The shoes, hat and rosary I made out of gum paste a few days ahead. It all turned out pretty smooth this time around, usually I have some trouble here and there. Can't complain! Thanks for keeping posted.

JJ's Graduation cake

Here's the tres leches I made for my nephew. I like the turn out, so far it hasn't oozed out from the bottom. Well I figured if you overdo it like they do in the Mexican bakeries then that's when it happens. I don't like mine really wet to begin with so this should be good. I will let you know what it's like when we cut it. This cake here is a 12" round, for some reason I really like round cakes, maybe because I can't get crisp perfect corners on my square cakes. lol That's sounds true though, at least I can be honest with myself and straight forward with others. The borders I did with butter cream and I did this little ruffle at the bottom before piping the yellow shell, I'd always wanted to try that. I figured I would on one of my own family cakes, in case I mess up it's just family. Ha ha I also found these boards that I set this cake on at Party City in the cake area, I love them. Not to bad price wise and saves from covering regular boards and you get that scalloped edge. Nice huh? Anyhow got to get to the other cake, Bye!

Authentic Tres Leches cake & recipe

I'm not a huge fan of these cakes, I'll have it here and there but I have come across a very good recipe and just had to share it with you. I'm making a tres leches cake for my nephew tomorrow (preschool graduation). I have started to make the cake and soak it with the milks then put it in the refrigerator today so I can decorate it tomorrow. That's how it should be done, so that you give it plenty of time to soak in and grab all the flavor. So this cookbook I got from Mexico, well not me but a relative brought it as a gift. I've added a little rum extract to mine, you don't have too, but since I'm not adding a filling I wanted to do that. So here it goes and I really hope you try it, very easy to make and really good too.

Ingredients:

Vanilla Genoise (cake)

8 eggs (separated)
2 0z. butter room temp (1/2 stick)
3/4 cup sifted flour
1 1/2 tsp. baking powder

Tres leches:

1 1/2 cups of evaporated milk
1 1/2 cups of condensed milk
1 cup of half & half
1/3 cup rum or 1 tbs rum extract (optional)

Chantilly Cream

2 cups of whipping cream
8 tbs of powdered sugar (sifted)
1/2 tbs vanilla extract

Directions for Genoise:

In a mixer on high speed beat (balloon whisk) egg whites until stiff peaks form. Remove from mixer and set aside in a separate bowl. In your mixer on high speed again beat (balloon whisk) your yolks and sugar and mix until thick & creamy, add vanilla and butter. Sift your flour and baking powder in another bowl. Slowly fold dry ingredients and yolk mixture into egg whites, alternating them until well combined. Grease and flour 8" pan and bake on 350 for 30-40 minutes. Using a toothpick in center to check if it's done. Remove and let cool on cooling rack.

Directions for Tres Leches:

Combine all 3 milks and rum (optional) in a blender and blend on medium speed for 30 seconds.
Once your cake has cooled return to baking pan and prick with a toothpick/skewer. Slowly add your milk using a large spoon to push down on cake so that milk is absorbed into cake. Once you've done that cover top of pan with foil and put in refrigerator overnight.

Directions for Chantilly cream:

In a mixer on high speed (balloon whisk) beat together heavy cream, sugar and vanilla until stiff peaks form. You are now ready to turn your cake over onto a covered board and decorate using the Chantilly cream. You can add fresh fruit topping to your cake if you'd like or decorate it any way you want. Enjoy!

Gumpaste baby shoes

I made these gum paste shoes and have posted a tutorial. It's not the best because I was only allowed 5 pictures so I chose the best ones. This picture shows you a plain little baby shoe, but in the back you can see what I've done with the other 2 pairs. I've added a little bow to one pair and some little flowers to another pair, all of gum paste. I did attach accessories as they were drying but not hard. I know, I get a little impatient and want it all done fast. You can also color the fondant to any color you choose, I made them all white because I have a christening cake this weekend and still don't know what shoes I want to add to the cake. Hmmm Since I don't like plain baby girl shoes, I feel like I have to add something to these ones, they're too plain. I will also add a link for you to get the pattern to make these shoes. Baby shoe tutorial

These are the things you will need. Cotton, patterns, edible glue,
rolling pin, spatula, thin paint brush, craft knife, veiner & gum paste.

Roll out your gum paste aprox 8/16" (thick as a pita bread).
This piece is the sole (bottom) of shoe. Use the same pattern
just flip it over to cut out the left foot.

*Note:You don't have to let it dry before applying the upper part of the shoe. I find it easier to do it as soon as I cut it out.

Roll this part of gum paste 4/16" (thick as a flour tortilla.)
After cutting smooth any rough edges with your fingertips.

Using a small brush and some edible glue (Tylose & water)
brush around the edge of the sole all around. Be careful not to get the bottom or it will stick to your mat.

Wrap the upper part of the shoe around the front first before
doing the sides and back. Add a little glue to the side of the shoe
to close the seam. Using your the veiner tool, gently push the upper part under the shoe to smooth it out.

I wish I could've been able to post more pictures on this tutorial but I was only allowed 5 pictures, so I chose these ones. I felt that these were a little more self explainable. Hope you find it helpful and it works out for you. You can always ask me any questions, I will answer any of them you have.

Gabby's birthday cake. This is for an old school friend's daughter. I made their daughter's christening cake and they loved it so this was another order (hopefully they have enough). I hope they like it. It's a marble cake with fresh strawberries and whipped cream. Whipped cream icing and used a little butter cream for the borders, I needed the bright colors. I made the street sign in her name and the number/letters out of fondant. Since fondant and whipped cream don't go well together I used a little butter cream under each letter and sign to keep it from melting. I made Elmo, poor Elmo he looks like Cookie monster in disguise. lol He was make from rice krispy treats and covered in butter cream. I couldn't find my fur tip, so I just used my spatula. He's a little heavier looking than he should be but nowadays he looks normal. lol Just kidding! Thanks for keeping posted!

Hot Wheels for a baby shower?

Pretty weird request, but coming from, Michelle, I'm not surprised. So her brother's having a baby boy next month (well not her brother but his girlfriend) and they are into Hot Wheels. Since Michelle couldn't figure out the theme she just bought 3 different color blue decorations so that's how the cake got it's colors. I know Hot Wheels are usually royal blue, orange, yellow...and so on. On the other hand this is what she wanted and my job is to make it. I came home to another disaster when I was going to start my cake......my fondant. For the life of me I tried to save it and it just didn't work....it dried out and would crack no matter how much shortening I used. I just about died at 3am when I gave up. Got up at 6am and did what I could with the ever so famous butter cream. It turned out ok considering it was supposed to be fondant. I hope she likes it and they enjoy it. Top tier was chocolate chip cake with chocolate butter cream. Middle tier was vanilla cake with cream cheese filling. Bottom tier was chocolate cake with whipped cream and fresh strawberries.

This is a must see cake DVD. Sharon really has lot's to show on how to make these perfect, bows & bows, she really is a perfectionist. They are so nice and really don't even look like a cake. I mean if someone showed up to a party with something like this you would probably try to unwrap it, that good! She has a whole set of different DVDs she's made, I have a couple of others too but this one is one of my favorites. I really am tempted to just make one for myself just to try. Hmmmm Maybe next month because this month I don't even have time to breathe. I have a couple of cakes this month and juggling time with kids, home and everything else is driving me crazy. Skater dude

Yeah dude, it was a last minute cake....like really, dude. lol My neighbor came over and asked if I could do a last minute cake for a nephew. He really likes skateboards or is into boarding. I really couldn't figure it out until I headed down to the store and my kids made me realize that "Teck Decks" are in. I hope I spelled it right. Well any 12 year old knows what I mean right. Sorry I'm just not that "in" right now with the kids latest toy trends. I still think Elmo is so cute and my baby likes it and so do I. Half chocolate, half banana cake with custard filling. I hope they enjoyed it. The birthday boy really likes banana cake and they don't usually have it at grocery chain bakeries unless you go to a scratch baker. Well not much more to say I know, picture isn't the greatest, but I am really saving up to get myself an awesome Nikon and will be snapping like crazy when I do get it.

He really wanted a baseball theme cake, since they were really impressed by the tall round cake they tried at another birthday party. Yay me! I like to hear things like that. It's all whipped cream, chocolate cake with fresh bananas and whipped cream.Airbrushed again and used some graham cracker for the dirt, good ol' sweet dirt. Pretty tall cake, 3 layers of cake and 2 layers of filling. My son was jealous since I made it the day of his birthday and didn't even make him a cake. Bad mommy! I know, I have to make it up to him. With the exception that his will be grand, spectacular, awesome...ok now. At least we'll try huh. Well hope you liked it, regardless of the team. Go Yankees!

Where's my balloon whisk?

I was going "kooky" here looking for my whisk. Yeah, you shouldn't leave things at children's reach....now I know why. My little man loves to get his hands on whatever is sweet in the kitchen. I had just removed my bowl from the mixer to add the color and I took off the whisk to throw it in the sink but I must have left it on the counter, because it ended up in his hands. As you can tell he doesn't mind licking it not one bit. I was a bit hesitant to post this picture, I don't want anyone to think we go around licking the whisk and just reusing without washing.......no it get soaked in real hot soapy water before I actually even wash it. My flat beater too, it's actually chipping. Time to order another one. Just thought I would show you how he tries to help in the kitchen to avoid all the cleanup. lol He can be asleep and if he hears my mixer go on he's there in a heartbeat, he loves any cream I make especially butter cream. What can I say, I have sweet kids!

Zoo theme baby shower

Have you ever had one of those not brain farts days but body fart days? I mean where you try to do something and no matter how hard you try your body just doesn't let you, well Sunday was one of those days. I know I should post the good, bad and the ugly of my cakes and I do and I'm honest with myself too. I was in such a time crunch since I had 2 cakes for this past weekend. Just out of surgery and no ac in my home.....yeah.....I did say body fart right. Well I just couldn't hold it together. And you know what hurts is that I try to do things even when I'm not 100% and I still can, but literally I wanted to cry and give up I pushed it a little over the edge this time around. I said I was going to do it and I did, wish it would've looked the way I wanted too but it didn't. I did apologize through an email and offered to make the next cake special, so we'll see what happens. I made figures out of mm fondant, freehand. It was a white cake with fresh strawberries and whipped cream covered in butter cream. Only figures were fondant. So there's a giraffe, monkey, elephant and a zebra which were on the crib bedding I tried to copy. Colors were tan and greens, in this area to give you a better idea. I just wanted to add more little things here and there and my writing...oh my writing....my hand were shaking. When that cake left my house I collapsed on my bed and was out for a few hours, without any ac and I didn't even feel it. Next time around I'm just going to have to say I can't, when I don't feel up to it. When it comes to cakes I can't say no, I love making them, but now I realize health comes first. I'll post the other cake later. Thanks again!

Quinceanera cake

The cake turned out well and she really like it. But dumb me didn't take any pictures at home since they weren't set up on the stands, so dumb me takes off to deliver it and when I get there I realize I don't have a camera. What else is new? I'm surprised my head is still hanging on. So, I asked the professional photographer to snap a few pictures and tell me when she gets them so I can buy them from her. This is all I was able to take with my cheap cell phone. There were 7 cakes total and they all looked the same with the exception that the butterflies were scattered around differently on all the cakes and the cakes were all at different heights on their stands. I actually really like that I was able to get smooth butter cream cakes (without fondant) and used the diamond impression mat. Since it was the first time using the mat, it turned out well. I added the fuchsia ribbon at the bottom and then just added the butterflies. Everyone really liked the cake especially the quinceanera. Eventually when I get the professional picture (hopefully in the next month) I will post the big picture of the whole thing. In the meantime you can use your bright imagination on what it would look like. lol

Eva's cake

Not entirely what I was going for, but I guess it's what's gonna do. I was going to use Eva's invitation picture on the cake. So, I went to my scanner, downloaded the picture and print. To my surprise my dumb printer is out of ink, I ended up with colorful lines all down the whole picture...yeah... not for Eva. So....my scrap booking head kicked in and I started cutting out flowers, circles and stripes. I was shooting for turquoise and lime green and eventually I did some purple to match paper underneath the cake. I was pretty frustrated that I ended up with scrap page cake and no picture.....but where was I going to get ink at the last minute? Anyways, this was her graduation/birthday cake in one. She just graduated from CVCA and it's also her birthday. I was so proud of her she always strive to do her best and was always helping her brothers at the same time. She really is a good girl and know she will do whatever she sets her mind to. Congrat's Eva! She wanted a red velvet cake with cream cheese. I have to say it's my first, I tried a scratch recipe...never again. That was the most dog gone awful cake I have ever tried. So good ol' me made it from a box. That was a different story and much better. It must be something from the south. lol Anyhow it turned out, just have to hear from her to see how they liked it.

Dinosaurs

This was a done deal, I had originally said I couldn't do it because I was scheduled for surgery yesterday, but it was cancelled...so I called her back and was wondering if she still needed it. She goes on to tell me that she had some weird luck that every time she went to the bakery for some reason either the baker had left early or just wasn't in. I had said no at one point, then the bakery kept asking her to come back until I came to the rescue. lol No really she was happy that I had called back. She thought she was never going to find her son's dinosaur theme cake. I hope she likes it. It's a 3/4 sheet cake half vanilla the other chocolate with whipped cream and strawberries. I used butter cream since it was going to be at the park and it's going to be warm today no refrigeration was available. I suggested butter cream. Airbrushed the top and used crushed graham cracker to look like dirt/sand. I used toy dinosaurs and palm trees, piped a little green around and made a little water pond. Hopes it was what she was expecting. Thanks!

Kindergarten class cake

I was finally able to see my daughter's kindergarten teacher, who by the way... is the best teacher. I hadn't seen her in awhile, I so missed her and so did Kayla. So, I mentioned to her that I would do her graduation cake for her kindergartners. I was happy and started to think of what I could possibly do that, Costco, wouldn't. Since that's where she was going to order it in first place, I had to make it better! Well so I think I did. I wanted the chalkboard look with the list of kids names and a piece of chalk, crayons, apple and eraser. I so vividly remember the alphabet strip that goes over the chalkboard, it reminds me when I was in kinder.....actually I still remember my teacher's name, Mrs. Berkel. Wow, I'm old! Well that's it really, used same techniques, airbrush and fondant accessories. Hope they enjoy it!

Fucshia butterflies

Guess what? I'm so happy...I was able to find some butterflies in the color I want and all ready to insert into the cake. I came across this store on eBay that has these butterflies in every specie you can think of and any color, if it's not on her chart just send her the color and she matches it. You gotta love these people man. Well I found my color and they are very reasonable.....she ships out the next day too. Can't wait. This here in NOT a cake I made but I just posted this picture to show you what they would look like. I hope you like them as much as I do. I'll be needing them for a quinceanera cake this month, so I'll post those pictures when I'm all done with the cake. Krone chopper cake

When they called to see if I could make a chopper cake, I was like "cool a motorcycle...airbrush, black and silver, chrome parts." She was like, no, it's like a tractor. Oh...that. Yeah, what about it? Then I figured if I made a dog why not a tractor right? Wrong....this was a pain in the butt cake. I learned alot of wrong before right while making it. I told myself I undercharged and I worked myself out, leaving no energy for the other cakes I have to do. So maybe a few days sleep will make up for it, since I was up until 2:30am working on it. I really just wanted to give up and say something like, "The dog ate it, sorry!" If that didn't work in school do you really think it would work with her? By the way everyone knows the dogs not allowed in the house. Never mind. I carved and this time I didn't fill it because her son really didn't want to eat it he just want to show it to his friends and co-workers, who by the way are Krone and John Deere manufacturers. This is his line of work and he does it well. So he wants to have it until Friday just on a table to show off, he's real into this type of stuff, if you know what I mean. I tried and gave it my all and that's it! I don't want to see another tractor! lol It's a chocolate pound cake covered in fondant, all decorations are marshmallow fondant as well. Hope you like it!

Big things come in small packages

This is one of those 2 tier mini pans, I picked up at a cake store. I think their cute, but they're a pain in the rear to cover in fondant or even frost. I would not make 200 of these cakes for a wedding and if I did I would charge an arm & a leg. I had some left over cake mix and poured a bit in this pan to make this mini cake. I think small things are more time consuming than a larger cake. But, I do think they are cuter in some sense. I remember watching that cake show on WE and the cake girls had like 200 of these cakes, they were pissed off and irritated with the long hours it look and had to hire extra people to come in and help make'em. In the end, they said they had charged too little money and would never do these again. I just made one and feel their pain. lol Thanks for tuning in on my cake gossip.

Mmmmm...Cake pops

These are cake pops for those who might think they're truffles. With the exception that I made them a little different. They are an excellent little bite size treat, but for those who know me....it's not enough. lol I had some left over cake pieces that I cut off my last cake so this was the result of that. I had always wanted to try them and...... voila cake pops. I'm to thrilled about dipping the whole pop, so I made cake balls and melted my white chocolate, "a la lazy" micro style, then put it in a parchment bag and drizzled it over my semi frozen pops. I made mini chocolate ribbon roses and just stuck'em on the top of pop then just added this little gingham ribbon. These would be cute for a bridal shower or really any party. I was going to do a bunch of different styles, but with 2 kids always pulling at you for something, it doesn't always work out. They do taste as good as they look, worse part is that you can eat and eat and not get full. So if your on a diet or trying to avoid sweets don't try this! lol Seriously DON'T! Another pretty book

I can't wait to get it. It's not a new book but it sure is worth it. I was in Michael's and went over to the book section and browsed through some cake and cupcake stuff, but this book was the best. It really has pretty pictures and some really nice ideas and good stuff in it. So I didn't have $30 when I was in the store and you can't use your coupon on books.....arrgh. So, I came home and I usually buy books at Border's or even Amazon. In this case I looked and searched until I found it for $18. Yeeeah me! Wait did I sound like London from Suite Life of Zach & Cody? lol My daughter watches too much Disney channel. Well, as soon as I get it I'll browse through and try to make something from it. I have a really big project in June, a cake for 350 people. That's a first for me I'll be up all week that week when it's due. So far, this is all I know 350 guest, all chocolate cakes, fuchsia/magenta/gold, butterflies, stripes...I think that's it at least for now. The rest is up to me. This really was a last minute cake. Got one of those wake up calls, you now the ones you hate to wake up and answer....to find out you have to work. lol No really, I didn't want to get it, but I figured maybe it's good news. Well good because I needed to do it, but I was so wasted, not feeling good and really tired. I hope it doesn't show in the cake. This was for another co-workers relative, who's graduating from high school. Purple cap with yellow/gold tassel. I airbrushed (again) the whole thing. Chocolate cake with custard filling, fondant overlay. They thought it was cool, hopefully everyone at the party likes it. I think I need a cake break, and need to sleep for a few days.

Corona bottle cake

Thought about this one for awhile, it was a first for me. I guess it turned out. Lemon cake with vanilla butter cream filling and covered in fondant. Lime is also fondant sprinkled in sugar to look like salt. Who has a Corona without a lime and salt? Ha ha Well I hope he likes it, it's actually for my sis-in-law's coworker. He really likes Corona's, I guess it's what he always orders at the bar. Small cake just looks big in the picture, but really only feed 10-12 people. Wasn't as hard as I thought. Carved it freehand and used an edible image I got from Google. I love my edible printer it does anything I want it to.....that is if it's not copyright....dang it, smart printer! Well I hope you like it, I made this in place of beer bucket. Sorry guys.

Baby clothesline

Simple baby shower cake I made for my sister's family. I guess it's a family & friends month. She's having a boy and I've always wanted to do clothesline cake, I think it's cute to see baby clothes hanging. I have a stamp set that I love and have made little cards and invitations out of that looks just like it. Well at least I can say I made one. I would have preferred to make a round one with a little basket on top of the cake.....aawww. Well maybe on another occasion. This was a vanilla cake with pina colada filling and it was a butter cream frosting. Thanks for looking.

My doc's cake........

This was a special request from my doctor's wife. He has so many interest. For one he's a doctor and a good one too, second he's into golfing (what doctor doesn't like golf), third wildflowers and I added the last his french bulldog (Lily). So I tried to incorporate all his likes into his cake. I made this wildflower book, and a doctor bag with a stethoscope, golf ball, ball picks (whatever they're called), golf club and of course some poppy's. Oh did I forget.....an I phone with his dogs picture. We have a small story behind that...he loves this dog...maybe .....more than his grand kids. lol No kidding, I say that because we once asked if he had any pictures of his grand kids on his phone to share and as he scrolling through his picture we couldn't help to notice that picture after picture after picture were Lily (his dog) so total of 68 pictures and not one of his grand kids. So we laugh about that in the office. Well this weekend I had 3 cakes to turn in, all were okay but this one....yeah the longest hours of cake making come down to nothing in the end. I just wanted to give up on cakes.....I cried and chewed myself out. The bag's back side started to come apart in this 102 degrees heat. So the handle broke off and the cake was so moist and the cherry filling doesn't help to stabilize either. Well it just didn't do well.....until Alrie just said those magic words....Don't worry it's great, couldn't have been better! I love her, I wish all clients were like her! I know we all have bad days. End of story... this is what it looked like before the damage. I hope they enjoyed it!

Rugby Ball

Congrat's, Chris Naegele! This was for my friends son who played with Humboldt State Rugby for a few years. Well he graduates this weekend and this was his cake. Chocolate cake with amaretto butter cream covered in a dulce de leche fondant. The Jack's Logo is an edible sheet. I used those stupid, Tappit, cutouts of which drove me crazy. I think those dumb things took longer than the darn cake....and still not good enough. Well this is it! I'm checking them off my list for cakes this month. I have 6-8 left for this month so far, I feel like I'm on a bakathon. Just baking, not eating!

This was a fun cake to make, it reminds me of my childhood. I even bought my kids the newer version which then was Shrek and you'd have to pull his ear wax and all.......yum. ?!%$* Maybe not on a cake. So this one is for my doctor's at the clinic they both have birthdays this month, so I decided to make a little cake for them, and my boss decided on the theme. She thought they would get a kick out of it. I made a lemon almond pound cake with a whipped lemon cream. I tried a few new things this time around. Lorann oils & airbrushing the whole cake. I have the hardest time unclogging my airbrush, thanks to some members on Cake Central I unclogged it. I was under the impression the so called cleaner did all that, but "NO" you have to take the darn thing apart and gently and patiently (I don't have that) clean it. So after almost going through all my red to get this result I've decided maybe coloring the butter cream would be easier than spraying it. Well at least the tweezers came out okay. Should've used those on my eyebrows. lol Kidding! Thanks for keeping up on my blog, I will have plenty of cakes this weekend to post, I've just been busy with other things and cakes.

Jersey cakes

These were 2 cakes I made for a party, and each birthday person has their own favorite team. So I made a, Chivas, (soccer jersey) and a, Cowboys, jersey as well. They were both of butter cream with fondant accents. I used my printer again for the Chivas logo and for the Cowboys stars on the side of the arms....of course you cant see them. Well better luck I'm still in search of a better camera. I've been using my cell phone for all these pictures. Give it up for the cell phones!

I really wasn't in the mood for a last minute cake but I did it anyways. Hey...sometimes you just have to do these things. In my situation I think I can be lying in my death bed and still get up to make a cake. lol Anyhow a friend called me last minute and decided she wanted a little fondant cake for her birthday. She'd always wanted a fondant cake, she told me when when she went to order a cake for her wedding in the catalog she requested a certain cake (not to big) then when she picked it up it wasn't what she had ordered, at least not fondant. Anyways this is what she wanted this is what she got. She was happy. Marble cake with fresh strawberries and cream covered in marshmallow fondant. All decorations and accessories are fondant. Keep posted I'm working on 2 cakes and they are both sports jerseys.

Baby bud

This here is a baby shower cake I made for a friend of mine. I bought this little cake decor from Deco Pac, it's so cute. It only comes in yellow and since she was having a boy it worked out good. It's a (non-dairy) whipped cream that I tried for the first time, I actually like it, easy to work with and taste good (Flavor Right). Best part no frig required, wheeew.... it was at a park and it's a full sheet.... no cooler was going to have space for this cake. I also got to use my airbrush for the first time. I was pretty happy and it's easy to use, I think I'll be using more of it on my cakes. Well I really wanted to take a big bite of this cake since it was a marble cake with fresh strawberries and the whipped cream....mmmm......in this heat it sounds good to me. This Deco Pac stuff is cute and it's easy just add and decorate around it, I think I'll be ordering more of these little things and changing it up. Yeah this hand making stuff with gum paste is getting time consuming, I guess for the real nice cakes we'll do that. Well can't use fondant on whipped topping stuff too so never mind.

Flan de crema

Well, since we didn't do anything special for Easter but clean house and be lazy. I treated myself and kids to, Flan de crema. I got the recipe from a friend some time back and I make my flan like this all the time. It's a hit and everyone really likes it. I will post the recipe for you guys to make and tell me how you like it.

Recipe for Flan de crema

1 can evaporated milk

1 can condensed milk

1 cup of whole milk

6 eggs

1 box (8oz) of cream cheese

Syrup

1 cup granulated sugar for syrup

Pre-heat to 375.

In a blender, blend all ingredients except sugar until smooth. In the meantime in a small saucepan put in your 1 cup of sugar on med-high until it turns into syrup (do not add water).

Syrup should be a caramel color. Once done immediately pour syrup into your baking pan coating the entire bottom. Now you can add the blended ingredients to the pan. Cover top of pan tightly with foil and cook in bain marie (double broiler method) making sure the water in the bottom comes up halfway to the flan pan. Cook for 1 hour. Once done, remove from oven let cool before putting in refrigerator for 2 hours. Serve chilled.

I love this mini cake. Maybe it's the colors ...no...maybe because it's small. I don't know I just really like it.....oh I know it's the whole cowgirl idea.....yeah maybe one day I'll have some pink cowboy boots and ride like a cowgirl.... Yeee haw. Ok, I had nothing else to do so I made it. I'd been wanting to try my new mini pans and didn't really know what I wanted to do. So this is what just popped in my head. It's 2 mini cakes all covered in fondant so are the little accessories. I tried to make it look cute and girly and I think I pulled it off. So I had to make a matching cookie, of course little pink & tan (embossed) cowboy boots uh maybe it's cowgirl boots. Someone correct me! Anyhow wasn't that hard to do took me about 15 minutes....hmmm can you tell. Maybe you can, was just in a rush to do something for a spare 1/2 hour that I had free. Well you got the point. Hope you like it as much as I do. Yeeeh haaaw! lol

My Empanadas

These are addictive little things, you just want to eat one after another. They are the easiest thing to make too. I will post recipe so you can make them and let me know what you think. I filled them with strawberry preserves, that's all I had at the moment but you can fill them with anything. We call them empanadas or turnovers same thing. I don't fry them. I know some do me...I bake.. I love to bake. Ok so here's the recipe.

Dough:

2 cups flour

1 stick of butter (softened)

1 8 oz. box of cream cheese (softened)

Filling:

1 tsp. fruit preserve

To make the dough you need to combine all three ingredients and knead for about 3-5 minutes until well mixed. Dough should be soft not sticky. Break it up in 3 parts and roll out aprox. 3/16 inch thick (like a thick flour tortilla). Using a tall drinking glass or a 3"round cutter cut your circles, fill with 1 tsp of fruit preserve of your choice (apricot, pineapple, strawberry...) fold in half and use fork to close pushing down to crimp. Preheat oven to 375. Place on ungreased cookie sheet and bake for 20 min. As soon as they come out of oven you can dip them in, granulated sugar while hot (optional).

I told you they were the easiest thing and you don't need a ton of ingredients. Enjoy!

Mario's back again.

My camera wasn't working so this is a picture that Rosita took and I stole from her my space. They loved it and that's what counts. Cake was 2 tier, top was vanilla cake with whipped cream and fresh strawberries and bottom cake was chocolate with whipped cream and bananas. Little story behind it.Here we go....I had went to sleep at 3 am Sunday morning working on Mario and other little things, so I set my cell alarm so I wouldn't wake anyone at 6am. I figured I'd get some 3 hours of sleep, well I don't know how crazy I slept but my phone was under my back and the alarm never went off. So...I woke up to the morning sun in my face at 8am (nice sleep hhhmm....snore) and was real behind because we were supposed to leave my house to the bay area at 9am. Didn't happen! My little one decided he's was going to stick his finger in my already iced smooth cake...aaarrrrgh! I am going ballistic and late...... I begin to fix the cake and finally start to put my top tier on when ......yeah how'd you guess...it fell over and messed up by bottom and ruined my top. I was just about ready to give up on cakes. In my rush to scream and run off like those crazy runaway brides, I break a glass cup spill what's in it all over the floor. SHOOT ME PLEASE!!!! Well just thinking about it erks me but it turned out and we were late to work but the cake arrive in one piece after gluing it together with Crazy glue for a 2 hour drive. lol I'm just kidding. Well it turned out, let's put Mario to rest for a while...please. Thanks for tuning in.

Mario in DEMAND!

This is a another Mario order. Now everywhere I look I see Mario. lol I made 25 Mario cookies. I really need to find a cutout for this little guy. I used several different cutters to get different shapes until I came up with this. Time consuming little things, but I think they're turning out better as we go along. Believe it or not, I used a flower cutter for his mustache, small oval cutter for nose, round 2" cutter for face and hat, a Wilton tip for eyes, a small heart cut in half for ears. The "M" I wrote with royal icing. It's a No Fail Sugar cookie recipe which you can find on Cake Central and Antonia 74 royal icing. I hope this is the last week of Mario Bros, I would like to see new things come my way. I guess I shouldn't complain I should be happy to be busy. I will post the 2 tier cake for the same party tomorrow not done yet, actually haven't even started it. Long night.... gotta go. Thanks for looking.

Mario & Luigi cake & cupcakes

These were time consuming little things because all the cutting is freehand, but I like the bright colors. I made 36 cupcakes and a 10" cake. It was for my husbands cousins two little boys she decided to celebrate both her boys birthdays in one. So we made Mario & Luigi. The characters were made with fondant and a little tylose, I can never get the gum paste to do wonders for me. It dries out and then cracks. I tried Sweetex for the first time and I'm so happy. It so much easier to smooth onto cake, I really love it. I figured my last cake was made of fondant but not everyone likes fondant, so I settled on butter cream and it worked! Louis Vuitton diaper bag cake

It's one of those, "I wish I has a real one," things. This is my version of a Louis Vuitton cake that my sissy in law's supervisor ordered. It was a surprise cake so it's actually small, more of a decorative purpose because they ordered another cake to eat. Not that my cakes aren't good...but because it was a surprise. Now I am not a big fan of fondant as I have mentioned before but this is good stuff. I bought some caramel vanilla swirl marshmallows and made the fondant out of that on a marble cake. It's like eating dulce de leche. It's sooo good! Maybe it's just me!?^%$#@ No really.......sooooooo good. Louis design monograms were hand painted with gold luster and Tequila...sorry didn't have Vodka. It's just as good. Freehand work because I didn't have any fancy stencils or stuff like that. I think that's what took the longest. Baby's name is going to be Tristen and his theme is turtles and starfish, in light green and blue. So we incorporated those on the cake. Blanket has a turtle and I made some star toys and put them in side pocket. Little beanie has a star on it too. And last but no least his name on the blanket.

Not a fan at all, but I do love cake. You know, I'm like the fat kid that loves cake...any kind as long as it's CAKE. With the exception that I really am fat and can't live without cake. True confession. lol I made this cake for my sister's cousin-in-law. He's a true die hard Raider fan. I mean from having your whole master bedroom decorated in black and grey and queen bedspread is even Raiders. That's awful. Well football cake is covered in fondant and made it look as if it's on grass (butter cream). That's it nothing special.....can you tell? No secret tips.

Hello.....hello. Well it's a cake not a phone, no it's a cake phone....ok forget it, it's an iphone cake. I made this for my boss's son who by the way works for Apple and designed some of the games that are on this thingy. His favorite cake was lemon poppy seed and that's what he got covered in vanilla black fondant, which I'm sure everyone had a black mouth when they were done eating it. I took this picture with my cell phone. Camera not working at the moment, maybe it's time for a new one. Everything's edible. I just bought my printer and some edible ink and have been making things like crazy. I almost used up using all my edible paper getting to use the darn things, but as you can see it works. Wasn't as hard as it looks actually a simple pleasant cake to make, the most important thing is they loved it. And that made all the difference.

This was a different cake experience. I'd never made a dog shaped cake before so this was a first. It's supposed to be, Lily, his french bulldog. This cake was for a doctor I work for, he was surprising his wife for her birthday. Well we started off with a scratch orange cake and creme bouquet butter cream filling. It reminds me of a orange creamsicle....mmm. Anyhow the carving part of the cake was tricky but I managed, she's edible just the head and legs aren't but her chubby little body are. I used a styrofoam head to make it light and tilted his head a bit to make her look at you like a dog does when you talk to it. For the legs I used pillars wrapped in fondant and she's sitting on her back ones. Made a pink leash around her neck and gave her a black star tag, I forgot to write her name on it, but we all know who she's supposed to look like. I then placed her on a round board and piped grass to make her look like she's sitting on the grass. Thanks for looking and hope you like her!

I was finally able to upload this picture. My camera wasn't working so Olivia took the picture on her cell phone, if it doesn't look to clear you know why. I made this for one of favorite nurses where I work part time. She's a big tea drinker (Earl Grey) of course. Well she was very surprised and never expected a cake like this. It made me happy to see that she really liked it. It was an orange cake with cream bouquet butter cream....that stuff is good and I don't like butter cream very much. It's covered in fondant, the little so called mug is rice crispy covered in fondant. Had fun making it, would've liked it to be nicer, but it's going to do for now. Color inspiration came from Mary Englebright (hope I got that right). Thanks for keeping up on my blog! Grace's disaster cake.......

I know I should post nice cake pictures but this is one of those things you just don't forget. Yeah....cake down. After 6 hours of work on this "Kathy" purse it was approximately 3am when I was trying to move the cake to clean up some water that had spilled near the cake and the carton below just bent and the purse cake fell. This was really upsetting, I was erked. I was going to paint the buckles and little brad looking things silver and that's it. But I was determined to finish the cake and go to sleep......cake happens. So you can see what resulted of this disaster in my next post.

So here's what came from the fallen cake. The party was that day and I had no time whatsoever to make another cake purse, at least made of cake that is. I could've done a rice crispy one but just didn't have the energy. So I was left with crown from the "Kathy" purse, and she really wanted that to be a part if her cake. So I made a pillow out of rice crispy made a trim and stuck the crown on top. Decorated the oval cake with zebra stripes and added a few flowers around the pillow and this is what I ended up with. It's alright, she liked it, but I was really looking forward to the purse. Maybe next time.

Mocha dream drizzle

I was really bored and wanted something sweet, so this is what I came up with. Marble coffee cake with a mocha cream filling drizzled with chocolate. Now I hope, I'm not up all night with all this good stuff, because the "sweet queen" needs her sleep. LOL So my kids were even surprised that I made this for us, we usually eat scraps with milk. It's too nice I don't even want to cut it. But then it wouldn't be a sweet treat if I just looked a it. Well off to devour my new creation. Thanks for looking. You can look but you can't touch!

Kayla's cupcake tower

Made this for my daughter's 8th birthday, ok so it's not a cake but a huge cupcake and a tower of cupcakes. I made the stand from scrap paper and it wasn't that hard to make. Just wish I could've made it a little bigger to fit more cupcakes. I made different flavors like, chocolate hazelnut, vanilla chocolate chip, lemon, confetti all with whipped topping in different flavors. They were a hit and pleased everyones sweet tooth. It looked so nice and colorful, no one wanted to believe the cupcakes were real. I didn't even want take it apart, but you had to eat them. Real fun thing to make I wish everything I made can be cupcakes from now on. LOL

Well maybe it's just me but I like these. It actually fits 2 cupcakes and I stamped a little heart and added a red stripe to top front and bottom of box, made a tag and tied it with ribbon. Simple, but cute. Inside are red velvet cupcakes which by the way it's only because they are red that I used them, and cream cheese frosting with a little fondant heart on them and a red few sugar sprinkles. I didn't eat them because I had to take these pictures but now that I'm done I will indulge. You know this diet thing isn't for me I guess I should just start next month.

Who said cupcakes? These are normal still a bit small for me but they are supposed to be a normal cupcake size. Ha They are covered in marshmallow fondant and embossed with a rubber stamp. These so happen to be rubber stamps I have from my huge collection of, Stampin Up.The wrapper is also scrap paper I cut out and added a little organdy bow. So easy to do and cute too. I really thought that the fondant would stick to stamp but with the help of a little Crisco on the stamp it didn't. Ideas are endless if you want to emboss because there are so many stamps to choose from and you can wash them or rinse them when your done. These were new sets I hadn't used by the way on paper so I'll just set them aside for this purpose. Now the only one that I didn't emboss with a stamp was the multiple hearts with a red and pink heart that's just a small heart fondant cutter. I still like the other effect. I will post a how-to do this after this post to give you an idea. Thanks for looking.

Getting ready for Valentines....

Just made these and my little one just couldn't keep his little hands off them. They're mini red velvet cupcakes with cream cheese roses in a small heart bucket. This is a cute arrangement to give for those people who don't want chocolates. Well at least you don't feel that guilty because they are bite size cupcakes with all that frosting, well maybe on the other hand that's not a great idea. For me I would have to say a cupcake over a piece of chocolate. Well you cake lovers know what I mean.....come on....can I get an amen! So I have other Valentines things I have to get to so I hope hope you can savor them as you look. Hahaha

Soccer ball cake

Ok, so I decided to make this soccer cake for my husbands godson and I really thought a soccer ball would almost be like a puzzle just connect them.....uuuuh no. Well I guess I should have started by having the proper hexagon cutting thingy, but no I didn't so I had to cut around it to get it to look like a hexagon. Anyways I got a little impatient and was running short on time so then I remember a soccer ball (of course better) with a scarf around it in a book I bought, so there I go, so I wouldn't have to keep cutting out any more weird shapes. So this is what I ended up with. Not exactly what I wanted but it's what's going to have to do. Good thing is I finished it on time. Wheeew..... I like to take my time on my cakes but I just didn't have it this time. Maybe next time thanks for looking.

Zebra stripe cake

I just made this today for a nurse at my old job. It was her 50th Birthday so I thought this would be just perfect for her. It's a spice cake (which is her favorite) with cream cheese filling, covered also in cream cheese with fondant stripes and ribbon roses. It was actually really good and moist, the most important thing is that she really liked it and everyone who has a piece loved it. Nothing makes me happier than knowing that people like my work. I know my work isn't perfect but I sure try to make it look as nice as I can. I'm actually pretty pleased with my work on this one, this really was my idea and work together. If only cream cheese crusted a little better than maybe I could've said it's was perfect, but on the other hand it was actually very creamy. Hmmmm I don't mean to sound difficult. Like London says, " Yeah me!"

Teddy Bear Shower cake

This is just another baby shower cake. Not my inspiration but my hard, back breaking, treacherous work. Just kidding! A good friend of my mom's found this cake on Cake Central and really liked it, so she asked if I could do it for her. I did what she asked and here it is. Well maybe it's not as perfect and pretty as the real one, but she sure thought so, as long as she's happy who's to care. I thought it would be harder than I expected but I managed, it wasn't that bad. Everything you see is edible but the straws holding up top layer, well unless the cake is that good that you never even noticed the straws. Ha No really, I guess the best part of the whole cake thing is getting to eat the scraps and oh the left over filling......oh.......in this case......fresh strawberries with fresh whipped cream.....mmmmm. Wasn't hungry till I said that, well I guess I'm going to have to finish the scraps and work on my other project. Thanks for keeping posted.

Virgen Mary

This particular cake was done for the traditional, Nicaraguan Purisima. It a full sheet cake and I couldn't get an edible image for this huge cake, so I used this picture of Mary and had it laminated and just set it on the cake. I added flowers all around to cover up the sides of the picture. It was a hit everyone really liked the cake and it was so moist I just kept picking at it. I'd never done a cake of this nature but I don't think it will be the last either. Picture isn't that great but the cake was so big and the glare of the laminate didn't help, so this is what I was able to get from it. You pretty much have an idea though. I googled for ideas and never found a cake done of Mary so it's pretty much my own creation. Hope it something different that you might like.

Christmas cookie baskets

I just made these today, they're filled with sugar cookies and iced in almond/vanilla royal icing. With just 3 days till Christmas I'm baking away. Just not for me of course just orders I need to get done by tomorrow....whuuuuh. I guess I should get back to work and stop bragging on baking....it really smells good...pumpkin rolls with cream cheese filling.....brazo gitanos.....mmm...eggnogg cakes.... Ok so I've gained a few more pounds but I can't help it. I'll make another New Year's resolution to lose weight like I have every other year but never get around to doing it. Ha Ha Ha Don't you wish your cakes were as good as mine, Don't you wish you cakes were as good as mine. Don't you? Dut Dut Dut. Don't you?

This is the best roll ever! Ok, it's called, "Brazo Gitano" aka, jelly roll. I found this recipe online and was hesitant to try because it was a chocolate roll, and I don't really like chocolate but after trying this I love chocolate. I ate the whole thing, it made me sick, but I still like it. Imagine this....chocolate sponge roll filled with fresh sweet whipped cream and a little rum....that's what this is. Death by Brazo Gitano. I will attach the recipe but you have to make it and tell me what you think. It's the best!

Brazo Gitano

5 eggs separated
1/4 cup sugar
1/4 cup flour
1/4 cup cocoa powder
1 tsp vanilla extract
4 tbsp sifted confectioner sugar

Filling

1 cup heavy whipping cream
1 1/4 tsp rum extract
1 tbsp superfine sugar

Beat yolks & 1/4 cup sugar until thick. Stir in flour, cocoa and vanilla extract mix well.
Whip egg whites until stiff not dry. Fold into yolks and flour mixture. Line and grease 15x8 pan. Bake at 350 x 15 min. Cool for 5 min before rolling in sugar dusted towel.

For filling: combine whipped cream, sugar and rum extract and whip until peaks form.
Fill the cooled roll with whipped cream and voila.....brazo gitano.

I know this book is not new, but I love it and you have to get it. I bought months back, and have tried the banana cake recipe, it the best banana cake I've ever tried. I was really surprised to see that she gives her most requested cake recipes but now I know why, because they are soo good. She also gives you step by step directions on how to make these really nice cakes. It's worth buying, go for it. My favorite cake in here is the teapot it's so cute I would like to make it. She has the new one out already it's her kids cakes, I hear it's real cute so that's next. Anyhow when you do get it, tell me how you like it.

I just made these to get a feel of how the edible markers work. I bought some Wilton edible markers and just used them. These are sugar cookies covered in royal icing. So even with the writing and all, they are edible. It's a cute idea as a birth announcement if your not to worried about a picture. I mean how many people actually eat the candy cigars? I bet people will definitely eat a cookie and they're cuter too.

This was one of my projects for this busy week. It's a Tuesday shower and she's having a girl, so that's what daddy to be said. This one is a bit different from the other preggy cake I made, with some glitches here and there but I guess it's going to work for now. I only have 20 other orders to go for rolls and cakes.

These are the cupcake favors that go with the cake. The flowers are exactly the same so they compliment each other good. They were in a small clear box wrapped in a organdy ribbon and the tag read, "Bun in the oven." Hope you like them.

Purple ornament cookies

I now love purple. I found this cookie idea, of course nothing like the one who first designed them but I tried. I thought they were cute and different for the holidays. We always see red and green everywhere so I decided to go with purple Christmas ornament cookies. Everything but the ribbon is edible, it's just for looks. Bought the box plain and stamped it all over (Stampin up stamp set) and put some ribbon and a tag. Voila, this is what I ended it up with. Hope you like it!

I love these, makes me want to have a baby. Every things always cuter for girls than they are for boys. But, I can still make boy cookies to look cute, I mean clothes wise. So, here's the other batch of my tryouts I made they would be for baby shower favors, you can also put these cookies on sticks and make centerpieces or just a simple gift for mommy to be. You can mix up colors and have lavender or turquoise or even blue for a little boy. Well I hope you like em. One of these days if I can get around to it, I have to make a tutorial on how I decorate these. Hmmm, whenever I'm not too busy. Like maybe in the next year or so.

I was in a cookie mode today, these were just some of 20 others I decided to pull out of the cookie bucket and just make. I used fondant on the cake and long dress with royal icing decorations. As for the dove (I love) and the heart dress I only used royal icing. I like the fondant on the cookie because it's so easy to wipe off if you mess up or just didn't like it, whereas the royal you just have to keep it or throw it or eat it. Of course in my house everything gets eaten. Well I'll post a few tomorrow when I get done with them. I'm also having camera issues, I think I should start asking Santa (my husband) for one. Yeay me!

Rum Cakes & Pumpkin Rolls.....

This is what people are asking for. The famous rum cake and my pumpkin rolls. I am swamped with orders for these two things for next week. I'm supposed to make a turkey along with dessert but at this point, I think I'll be driving through Mc Donald's for Thanksgiving. lol Well atleast I'm busy and not twiddling my fingers at home wishing I had something to bake for a purpose and not to eat what I baked out of boredom. Well thanks to all who placed those orders Christmas is coming so soon and I need to start my other stuff soon. Here's a picture of what they look like before they are eaten to pieces. Should I mention that I do use real rum and I don't even drink while I'm baking. It's solely for baking.....I said baking. And I don't stick my fingers in the made from scratch cream cheese filling for the rolls...nope not me.

The rum cakes have pecans on top and have a butter rum glaze that's poured over cake when it's still warm. You let in sit in it's glaze and it just absorbs all the rum.....mmmmm. They really do taste good, sometimes I wish we could a sample things online just click and taste. Maybe in 2050. Bye now!

Just made these cupcakes. They didn't last too long my kids devoured them. I'm glad someone likes my stuff. lol I've been wanting to try writing in chocolate and adding as a cupcake topper. Can't remember where I saw it but I liked it. Paper is scrapbooking paper from (Stampin Up) and just added a grosgrain ribbon and... there you have it! Ok, so if I was asked to marry someone with a cupcake in their hand I would probably eat the cupcake first then say, "Yes!"
